Established in 2024 by local chef and tuna fisherman Henry Margaritis and his partner Mariah Rocker, a designer born and raised on Hawaiʻi Island, Hardwood Poke Company is inspired by our mutual passion of the intersection of food and community.

We are grounded in sustainability: sourcing organic produce from The Green Thumb and the freshest rod and reel caught ahi from local fisherman, including Chef Henry himself.
Our approach is straightforward –
farm-fresh and sea-to-table food
that stays true to tradition.
